Chef Sheldon Simeon of Tin Roof Maui was just named the winner of the 2022 James Beard Awards. He was one of two finalists from Hawaii for the honor. He’s a two-time semifinalist for the James Beard Award and was a fan favorite on Bravo’s “Top Chef” season 10. He’s worked at several Maui institutions, including Sooper Secret Izakaya and Migrant Maui, and most recently at the Wailea Beach Marriott Hotel & Spa.
Sheldon Simeon’s menu is a culmination of his culinary education and his family’s food traditions. His grandparents migrated to Hawaii from the Philippines and worked on sugar plantations. They made a life in Hawaii together, and the dishes they created reflected their heritage and cultures. His layered Hawaiian rice bowls are one of his specialties, and he credits his family’s influence on his inspiration for the restaurant’s successful opening.
Using Fresh Ingredients
